New Year's Pico part 2

How rude of me to post a picture and no recipe.

Pico de Gallo Roll Ups

4 flour tortillas
8 oz fat free cream cheese, softened
1 tomato, seeded and chopped
3 jalapenos, seeded, rinsed, and chopped (remove all of the white membrane if you don't want it to be HOT)
3 T chopped cilantro
4 T minced onion
1 t minced garlic
dash of lime juice

Mix together all of the ingredients except the tortillas until well blended. Season to taste with salt and pepper (you can also add a dash of chili powder). Spread the cream cheese mixture on the flour tortillas and then roll each tortilla up. Cut each tortilla into 6 to 8 slices and put the slices in a round cake pan, fit them in kind of snugly. Now you can either heat them in the oven for 12 to 15 minutes at 300 degrees and serve them hot or chill them for one hour and then serve them cold.

I prefer them hot, but they are good both ways. The cream cheese tastes even better if you make it a day before you actually make the rollups. It is also good on crackers.
